A favorite tenant of most Croatian cuisine due to its specific taste and scent and health benefits. It is also important to distinguish between extra virgin olive oil because because of its different smoking points these oils are not suitable for the same application. Usually the olive is ideal for cooking and baking, and can also be used for frying, while the extra virgin is best preserved for salads and meal preparation. Hold olive oil away from sources of light and heat so as not to oxidize and lose flavor.
